Head – Butchery Operations

Lusaka, Zambia, Contract 1

PURPOSE: You are in charge of all Operations that relate to the production and processing of meat products up to the time products are sold in the Butcheries, this includes but not limited to [the day-to-day meat processing activities of the Meat Processing Plant operations, the day-to-day Butchery sales and marketing of the products].
QUALIFICATIONS AND PERSONAL ATTRIBUTES
Minimum of a Bachelor’s Degree in any Production or Operations Management, Marketing or related fields, Food Production, Hotel and Catering Management, meat cutting and  or a minimum of 6 years’ work experience in the meat Processing Industry or any equivalent combination of education and experience sufficient to perform job duties may be considered.

Previous meat processing experience in a meat market/butchery environment with traceable references
Knowledge of  HACCP/ ISO 22000/ ISO 9000 principles
5 years of retail experience
Butchery Machinery Competent
Friendly and positive attitude
Excellent customer service and communication skills
Attention to detail
Should have high integrity and be honest/trustworthy
Able to coordinate multiple-tasks and manage pressure.
Should be proactive and trainable
Readily adjusts schedule, tasks, and priorities when necessary to meet business needs

YOUR RESPONSIBILITIES:
The HEAD BUTCHERY OPERATIONS will be responsible and accountable to the CHIEF OPERATIONS OFFICER for performance in the following areas:

Supervise and undertakes the daily production plan for the Plant
Communicate the objectives of the plan to the teams on shift to ensure understanding and follow the assigned plan until completed.
Conduct the required checks from time to time to ensure the relevant data is recorded correctly and shared with relevant departments.
Establish the most efficient use of resources allocated to the line, i.e. cost, people, time, etc. to ensure that these are neither wasted nor misused.
Ensure the smooth flow and movement of product through the plant to avoid contamination and time wastage
Recommend new and different ways of doing things to improve yield and performance whilst still maintaining product integrity and quality.
Work consistently according to standard operating procedures and ensure compliance
Continually assess the technical competence of the team and take steps to develop their knowledge and skill.
Ensure all retail outlets have all necessary trading licenses and meet all legal requirements to operate.
Ensure all outlet cash, stock and process controls are implemented and effective in the region.
Review all staff disciplinary issues being handled and ensure that correct procedures are followed and HR are fully consulted
Development the Management of Meat Blocks, including Costing, Selling prices and GP%
Ensure cold chain requirements and other storage conditions are met for all products in the butcheries.
Ensure all operating environments are food safe with all Hygiene requirements and standards met.
Manage the product innovation pipeline in liaison with concession partners and sales and marketing teams and manage the seeding process.
Entrench good stock management systems such as FIFO in the plant to ensure stock rotation and eliminate product expiries and wastage.
Ensure all plant equipment is in good working order and maintenance/service schedules are updated.
Ensure all key Plant processes/activities are documented through Standard Operating Procedures SOPs
Ensure Processing Plant staff are adequately trained in Plant operations, customer service, hygiene, proper use of Plant equipment etc.
Ensure personal hygiene and follow health and safety procedures
Maintain Company standards and merchandise.
You will be responsible for the cleanliness of the Plants
Supervise staff under your Charge
Compile reports of various meat Products you have on a daily basis
Work with HR Department in the placement ate training of staff

OTHER DUTIES

Each Mika Meats employee will ensure that all Mika Meats Health and Safety policies and procedures are adhered to within their area of operations.
Each Mika Meats employee will assist the Business Development Manager in getting new business & maintaining existing clients
Each Mika Meats employee will ensure that all Mika Meats Human Resources Policies and Procedures are adhered to within their area of operation
Each Mika Meats employee is responsible for Mika Meats public relations with the clients, client’s employees, visitors, suppliers, Mika Meats is desirous to maintain a good relationship with its employees and sister Companies in the Group.
IT Management – Mika Meats has invested in IT for all its Operations and we have various IT employees to maintain the equipment. Each Mika Employee must oversee the IT equipment in his department and ensure it follows Mika Meats IT policies and procedures at all times.
Ensure strict adherence to the “Mika Meats Code of Ethics”.
